VIÑA NORTE RED SUSTAINABLE SELECTION
From several plots located in the municipality of La Victoria de Acentejo with a traditional vine growing system converted into a trellis. Vineyards with more than 50 years. They are small family farms without mechanization, with a manual harvest in 18 kg boxes so that the grapes arrive whole at the winery, making a selection on the farm. Little intervened vineyards, with a rigorous control at the foot of the field to achieve the best ripeness conditions. It is made with a vatting period of 10 days at a fermentation temperature of 28 to 30ºC.
Elaboration: Selection of our best reds that spend a 10-day vatting period. Fermentation temperature from 28 to 30ºC. With a passage through American and French oak barrels.
Tasting note: It is presented with an attractive garnet red color with violet reflections. Clean and bright. Powerful aroma of ripe black fruits, notes of cocoa, chocolate and spices. In the mouth it has a good structure, glyceric and broad, with a persistent finish.
Consumption recommendations: Service temperature: 16ºC.
Pairing: Beef, pork, and fatty fish (blue, tuna...).

Bodegas Insulares de Tenerife is made up of wine growers from the Tacoronte-Acentejo region, located in the north of the island of Tenerife, and as of the 2005 harvest, also by the Icod de Los Vinos Comarcal Winery, further north in the region. Island. In this way, it has gone from 170 members in 1992, the date of its constitution, to 803 winegrowers, of which 704 belong to Bodega de Tacoronte and 99 to Bodega de Icod.
